Eddie vs. Nate would be a really fun fight, but aye; Eddie's just trying to drum up some interest in the fight as on paper a rubber match makes the most sense for both Nate and Conor. (And if Conor wanted it, it'd happen.

What happened to Eddie's rematch with Poirier? That seems pretty unresolved at this point. I'd definitely watch Diaz vs Alvarez if it happens, but just looking at the number of Twitter followers each fighter has, it'll probably be Nate's decision as to whether that fight actually gets made.
