Fucking hell it's been many years until someone caught that
I remember years ago either reading or maybe taking part in an Internet debate or maybe it was in person(my memory sucks) where people thought the quote was “Bullshit Mr Hand Man!” Because he only had one hand. Needless to say I was thoroughly triggered.

I want to learn to cook steaks better. Jambalaya, gumbo, etc. gets old. Some good ole steak doesn’t.

Just like jambalaya, good steaks start with a plastic bag.
I usually do the season, sit out until room temp, and then throw on the grill for a couple minutes routine... but that only works for my med rare. If someone wants something else, I have no idea how to time it lol

Boiled steak is unquestionably the way to go, especially if it's a big, fat badboy.

At the posh restaurants I frequent, boiled food is common place and I like it. However, I do not like it when they make poached eggs boiled in plastic bags.

IF you live in an apartment and cannot use fire like the ancients then I get it

Being Primal makes a better meal IMO

Anyone have any suggestions for chicken? I Sous vided some breasts and then seared them on the grill, but the texture was off. I’ve really only had baked or grilled chicken (never poached) so maybe it’s just something I’m not used to.

Poultry ends up with a strange texture in my experience. I did a roulade with it and that was good but thicker cuts just seemed spongey or something .

It works well for chicken breast, which can be dry. For legs, you want crispy skin, which takes a while under the grill.
