Flank steak is one of my favorites if cooked properly. Kosher salt, cracked black pepper and Montreal steak seasoning on both sides. Get the Weber up to 450 deg, sear and cook both sides for 4-5 minutes, until internal temp is 137-138 degrees.

I can still eat it at your range but I pull at about 128ish and let the carry over raise it up a little bit while it rests.
Yeah, I pull it at 137 and let it rest for 10 min to get that. If you pull at 128, it's bleeding.
nice. My vote would go to the porterhouses. I haven’t had a good steak in a while, sounds good.

Local farm started up recently here and they only feed them grass...the meat is yummy
