tomatillos, which are not actually tomatoes.
that's the base for verde sauces. Normally I'd put a couple serrano peppers in, but for the kids I kick it down to Anaheim.

Ya we grow a ton of them every year, sticky lil buggers. Two plants yields more than we want to process. We usually just make green salsa and can it. Occiaionally I grill them and make fresh salsa/sauce.

FYI the Aji Amarillo is huge. Plant is 3 feet tall and shooting. Hasn't flowered yet though, not a single pepper has been set. My pepper guru says the flower late and hold until nearly december because they are a high altitude strain. Right now it is just taking up mucho space with zero peppers on. Interesting, my Aji Limon last year was similar but not this extreme.

tonight I made a teriyaki sauce from scratch. It takes about 5m if I'm in a hurry, or if (like tonight) I have some time to kill I can use fresh ginger and garlic instead of powdered, and cook it down instead of using corn starch.

The kids were coming home late and had to get a bath, but it was a "window" of 30m and food had to be on the table immediately. So I started the sauce early and steamed some rice and veggies to be done at the opening of the window and just microwaved the pulled pork when they walked in. By the time they washed their hands a hot dinner was on the table.

That's 4lbs of pork shoulder and about an hour of cooking in the kitchen for 3 full meals.

Cooking for the kids is awesome and the enchiladas look amazing, I love homemade mexican foods

I bet it is crazy hot down there, I just make sandwiches when it gets hot, I usually say fuck cooking or grilling. It is like 73 in my house and 95 outside at 8pm and I fucking hate it...I'm a winter and rain guy, summer is messed up and I don't even live somwhere hot...No idea how you people do it, stay hydrated

the last couple years, i went to the coast for a month. It's not "the heat" that gets you, it's the grind of the heat. It's inescapable, and as it ramps up it's just irritating all the time. But the other 8 months are beautiful. I think what's more worrisome than the heat is all the people moving here and the inevitable water shortages.

That's one thing I miss about OR, no shortages of water. Just shortages of sunshine, but IDAGF I'm pluviophile.

I had to google it. I guess I am one of those as well.

I don't even like it past low 70s with willamette valley air.

That heat does grind on you, I count the days until the next cool night when a stretch of hot air is forecast.
