I only fry chicken every few years but I was craving a fried chicken sandwich. Was pretty happy with this bad boy.

Tequila lime chicken skewers bbq'd on my new weber kettle. Slightly overcooked but overall decent first cook. I ate them in tacos last night and will be doing the same with leftovers tonight. A few pounds of chicken (breast meat here), juice of 4 limes and one orange, 4 chopped Serrano chili's, red pepper flakes, about 5 glugs of tequila, and a few cloves of chopped garlic for marinade, then sliced strips, threaded skewers, then seasoned with salt, pepper, and smoked paprika before grilling

Breakfast: Huevos rancheros

Lunch: No pasta lasagna. Basically, the meat is used to layer it rather than pasta.

I also made oatmeal for breakfast tomorrow and cut up veggies for dinners throughout the week. Apple season is here, so I made applesauce as well.

I'm going to make more to freeze later this week, then I think I'll take the scraps and try making some apple butter.

With some garden cantaloupe, salt & pepper pork rinds & unsweetened almond milk on ice.
Slowly I'm getting to self-sufficiency.

Grilled so.e potatoes, jalepenos, and serranos for taco Tuesday. Filled them bishes with leftover baby back ribs from the weekend for the protein.
