I bought some taco tongs to make the corn tortilla frying go easier. Dealing with a frying pan and two sets of tongs to do the process is a pain in the ass. Can't wait for them to arrive. They look like this:

Lunch: Philly cheese steak omelet w/ lamb instead of beef

Dinner: Smash burger. Toasted brioche bun, Japanese mayo, spinach, caramelized onion, 1/3 pound of 92/8 beef separated into two patties marinated in soy sauce and seasoned with salt, pepper, and garlic powder, two slices of American cheese because it melts the best, grilled jalapeno, bacon, fried egg with the yolk still runny cooked in bacon grease the way it was intended, Japanese BBQ sauce. OMFG this was so good!

Breakfast: Prosciutto sandwich

Lunch: Chicken Parm with spaghetti squash. The chicken is "breaded" with ground almonds. I made four servings for lunch throughout the week.

Chicken thighs marinated in vinaigrette for 2 hours then hit with The Gospel. I added a tray of beer for moisture. I used Applewood charcoal for this cook to experiment with flavors.

50 minutes in and ready for some direct heat and some Womp Naked sauce (except for the 3 pieces a communist will be eating).

I cooked tritip for the first time on my weber kettle. It didn't turn out too bad for a first time cook. It's medium instead of medium rare, but otherwise not a fail. I cooked it indirect until it hit 100, then stoked the coals and seared for 4 minutes on top and on bottom. A friend gave me shishito peppers from her garden so I tossed them in olive oil and lemon juice, thencooked them for 2 minutes until they were blistering. Served with pinto beans, seasoned basmati rice, and finished with Maille Old World mustard, cilantro, and then kosher salt on the shishitos.

I reheated some of my leftover frozen spicy sausage ghetti from a few weeks ago and hit it with enough parm to make my whole house smell like athlete's foot.

What's in the sauce?
It's easier if I just list the whole thing.

Everything other than the pasta is cooked in one pan, so it's a pan sauce that has all of the seasoning and oil that was left in the pot from the chicken and such. The sauce makes the dish. It is delicious! I stole it from a restaurant I lived by a long time ago. I don't know how they make it, but this tastes pretty spot on. This is the first time I've made it. I'm definitely going to make it again.

3 servings of penne pasta
3 servings of chicken breast
1 tbsp of paprika
1 tbsp of garlic powder
1 tbsp of oregano
1/2 tbsp of onion powder
1/2 tbsp of salt
1/2 tbsp of pepper
1 tsp cayenne
3 servings of asparagus, cut
4 cloves of garlic, minced
2 tbsp of tomato paste
1 cup of heavy cream
1/2 cup of grated parmesan cheese
1. Boil water for the pasta
2. Preheat pan
3. Prep veggies
4. Cook pasta
5. Mix the seasoning; season chicken
6. Add oil to pan; cook chicken; set aside & slice
7. Cook asparagus & minced garlic
8. Add tomato paste; mix
9. Add heavy cream; mix
10. Add parmesan cheese
11. Add chicken
12. Add pasta
13. Top with grated parmesan cheese

I just bought two pigtail meat hooks/flippers for the grill and smoker. I saw a guy using one with chicken and it looked pretty cool, even it it's kind of for barbaric novelty purposes.

Made some of what I dub “harvest stir fry”.
Kiabalsa, broccoli, squash, apple, red onion, and a yellow pepper. Sauce is soy sauce, apple cider, and brown sugar.
