Effort, not time.
It is the best for day drinking and not knowing when guests are showing up.

Start the process, eat anytime between 1.5-4 hours later. It doesn't matter when you take them out. They will be essentially identically done at the 2 or 3 or 4 hour mark.

How would I boil them if they weren't submerged in water? We are at sea level and don't have the apparatus to do it any other way.

Nah, just typed wrong from reading your post while I was replying. You can see the temp in the pics. You set it ahead of time and it holds that temp. That's how you get rare, med rare, etc.

Lol this is of some concern of course. And I think we've discussed it on here before. But the short is that using sous vide bags seems to have no significant significant increase in plastic molecules, pseudo estrogens, etc.

But it's a concern...Like eating red meat or grilling is linked to increased GI cancer.

But sometimes you just want a damn good steak.

Cliff's notes for those who don't have time to read. Splinty @Splinty meets a guy on-line on a Texas dating site catering to gay dads who aren't "traditionally handsome".
