Wish I had seen this thread before I did a 800gm (nearly 2lb) eye fillet today for lunch.

Really should necro-bump the steak thread.

I think skirt steak is another name for it...gotta cut it against the grain

But I grill them at home, I rarely order steak at restaurants...so I usually buy big hunks of meat for leftovers

No secret
Don't overcook is all I know
I just put salt n pepper on en for 45 mins before grilling

Use them for carne asada, idiot.

Marinade them in a special recipe beforehand

Might want to use a meat mallet on them to tenderize and marinade them in something with some acidity to break down the fibers a bit.

Yes, to the third question and that answers the other two. It's also easier to find and less expensive. The cost difference isn't exactly enough to put me in ruins but it matters when it's something you use a lot of.
