Peel and chop vegetables. Put chicken stock on bottom of pan. Add vegetables. I used carrots, leek, sweet potato and normal potato. Put chicken thighs/drumsticks on top. Roast on 180C for 45 mins. Steam/boil any other veg you want to have. Make some gravy (I use granules).

If you want traditional roast potatoes, boil them for 20 mins first, then add them to the roasting tin and coat them in oil.

The other option is to do the same as above with the veg but put a whole chicken in the rotisserie

Love to make rotisserie chicken. It's one to the cheapest, most hassle free meals I make.
