I bought three pretty good sized flank steaks the other day. They were on sale so I figured why not. Never cooked them before though. What’s your secret?

Smoked some BBQ ribs today, and they were delicious.
Might want to use a meat mallet on them to tenderize and marinade them in something with some acidity to break down the fibers a bit.

Yes, to the third question and that answers the other two. It's also easier to find and less expensive. The cost difference isn't exactly enough to put me in ruins but it matters when it's something you use a lot of.
