They are from Hatch, NM and i think is some kind of hybrid chile pepper. They can be mild like poblano, or fairly hot. They are only available for like a month in the summer. It’s a big deal, tons of restaurants, grocery stores, and farmers market stuff. We usually go spicy, but mild or spicy they are great for cooking and salsas. Love them. When the season is winding down, places will roast what’s left so people can have stuff ready to freeze. People stock up so they can have them outside of the one month.fill me in on "hatch" peppers
