So I have free access through work to a beautiful athletic facility complete with a track, pool, sauna, dumbbells and every bloody machine you can think of, but no barbells!
I wouldn't mind adding a bit of strength and muscle. Any suggestions guys?

Yes, you can do any protocol you like with those exercises. However, I used prilepin's table to come up with the 5x5 @ 60% 1rm. If you want more frequency, I'd suggest sticking with it and increasing frequency of workouts.
You're only looking to illicit a response to grow. Once you've generated that response, any further training is just going to prolong your recovery time.
