I seem to be in the minority here, but I say Yukon Golds. When ran through a food mill, you don't get creamier smooth flawlessness like you do with Yukons. Red Russets are much better suited for roasting or pan frying. What say you?

combination of Russets, Yukon Gold, and a little bit of baby red for some 'chunk'.

real key is to bring your butter and cream to just shy of simmer before mixing with potato mash.
and mash slowly, never with a blender

Not really too important because I like to mix other root vegetables in, like carrot, swede and/or sweet potato.
