Have someone tie a rope to a tree in the backyard and fray the loose end of it.
Tell her you got her a pony and that it's in the backyard. When she discovers the rope just yell "Oh no! It got away!"

If it's anything like what happened with my sister, you'll feel a little guilty for the next few months when she leaves carrots out for it trying to entice it to come back home. But eventually she'll get over it - you still get credit for having gotten her the best gift ever but don't have to feed a pony for the next 20 years.

We still bring it up during family events when the drinks start flowing. Lots of laughs.
Even at 45 years old she's still a little pissy about it.
