Rotisserie chicken thighs, butternut squash, tossed salad. Marinated the chicken in vinegar, habanero peppers and Italian dressing overnight and also made a glaze for before it went into the rotisserie out of mangos, garlic and brown sugar.

The other day I made crazy noodles.

I started cooking some chicken super noodles in a pan.

Added a bit of salt and pepper

Some soy sauce (made the broth go brown)

Then a hefty helping of Tabasco

Let it simmer for a bit and it was one of the most delicious ramen soups I ever had

Spanish rice:

Rice cooked in vegetable stock with a simple homemade tomato sauce, shallots, garlic, jalapeno, chicken, and spices.

I made enough for lunches until I go back to work after the new year.

Cheeseburger omelet. I had a burger the other day that I only ate half of, so I tossed the bun, cut up the rest of the burger, and added eggs and cheese. A simple and delicious dinner for tonight
