Oh yeah for sure. I kicked this one up!




Thanks for the feedback. It take a little to organize and post all the pics and I like doing it if anyone is going to enjoy the process too. Just dind't want to do it if everyone is just skipping to the final product anyways.

Will update later. It's not too hard since its just working all the spices into a large mixture. Nice thing about curries!
You don't have to post just for me, but I look at all the recipes and make mental notes about which ones I'll go back to try. Chicken tikka masala is a favorite in my family, but not something I have cooked before so I'll probably try it.

Have a look at Madras recipes too. It's a little spicier, but when it's right it's great

Omelette Souflee

I'll insert recipe later. Same ingredients as a regular omelette but made with a Souflee technique to create a hyper aireated inner omelette. Makes a great mouth feel the outside crunch and the inside Souflee.




Three eggs. I am lucky that I can get my eggs local.


Separate the yolks and whites. Salt and pepper the yolks. Add more salt to the yolk than you think you will normally need. Like twice as much.

Whisk the whites until they form glossy peaks.

that's perfect. This a good practice souflee recipe. You can do the whites with a mixer but its not that hard to do by hand and you get a really good feel for that perfect consistency this way.



Whites done.
Yolks mixed with spices.



Put about half the whites into your yolks, add cheese or anything else like chives and mix it together.


There. This will collapse some of those whites. Try to just mix it enough to be even without losing all volume.




Fold that mixture into the rest of your whites. FOLD IT. Don't just stir it. This will maintain those whites you just whisked.


heat butter on the stove, pour in your eggs after its hot. med heat.
Cover



When half done add some more cheese. I like more than this but trying to not go overboard today.
Then cover for another minute to finish.





Fold it in half. Dress how you want. In Texas salsa is a must. I like a little sour cream and chives.

Shit is like iron chef. Now I need to use canned tuna to make something.

Unfortunately I have some chicken thighs and other stuff I don't want to go bad so I need to use it.

TF is it with us buying canned tuna? I have 5 cans on my shelf. I had to buy jacket potatoes the other day to accommodate them.

Oh chilli omelette can be done. In fact it's the best I've ever had. Place called Pete's in Ventura. I just paused for thought there but it's definitely the best breakfast I've ever had. Followed closely by spicy jambalaya with scrambled eggs.


For the omelette you need the the chilli folded inside. Then chilli on top. Then cheese. With breakfast potatoes, not hash browns. Hash browns fuck it all up.

This looks like how I sometimes make my omelettes.
Start by making a regular omelette in a pan, when its half cooked slap your toppings on and throw it under the broiler?

Tuna and Ketchup
BTW don't by that brand of tuna. They kill the ocean I've learned. It's just what I had for now.







Take this stuff...





2 cans of tuna, drained
1 egg
1/4-1/2 cup cilantro minced
1/4 onion diced
1/4 cup nonfat Greek yogurt
1/4 cup Panko breadcrumbs
1 jalapeno
1/2 a lime juice
1/2 teaspoon cumin
1/2 teaspoon galric
salt and pepper to taste
a couple tablespoons of olive oil




Mix it altogether



Ketchup, mayo, chili powder, paprika, cayenne, and a little lime.
Kind of a spicy thousand island.


Mix it altogether.



Press the tuna mixture into a pattie and pan fry it over med or med-high until brown. I like to use avocado oil for anything higher heat.



serve it over a salad, or in this case I made a sandwich using the thousand island type mixture, some spinach, and some tomatoes.

Well tomorrow I may do the pots and make something. I wanna try eggs. We will see
