This a common fallacy.
It depends on the piece of meat.
The heavily marbled local wagyu ribeye that I have is better at medium where the fat is rendered into a much more buttery savory flavor than at medium rare, let alone rare.
Same with the opposite. Prime rib, tenderloin, etc. going to be better done at those lower temps even considering rare sometimes. Even with the same meat above, the strips are much better at medium rare than rare. It seems mostly the thick fatty ribeye that needs the time/temp.

In general medium rare is the optimal cook for most steaks and I hope that ruins your day fishing.

I'm a medium rare guy myself for the reasons stated above. But you know this because you can smell my delicious steaks across the street.
