I heard an anecdote about why that scene played out like it did.
Apparently the script called for Indy to have a full on swordfight with the guy, but on the day the scene was to be shot Harrison Ford had a terrible case of the galloping shits.
Harrison came up with the idea to casually shoot the swordsman as a way to film the scene without shitting his pants.
I have no idea if that's true, but it's a great story
