ProTip: freeze your butter and grate it like cheese when you mix it with the flour. It's super fast to incorporate with the flour, so it doesn't melt until it goes in the oven. HUGE lift and super-soft. They pull open like accordions.

Breakfast: Patty made with grated sweet potato, spinach, onion, garlic, & an egg. Topped with aged white cheddar, crab meat, and a poached egg with a little paprika. Served with a side of asparagus.

Lunch: Shrimp, spinach, provolone, and red pepper flakes omelette

Dinner: Lobster roll. I went overboard with the mayo and dill (first time making one), but it was good.

Breakfast: Banana pancakes with mango & maple syrup

Lunch: Spaghetti squash turkey bolognese with asparagus. I made four servings of this for lunches this week. I also made oatmeal for breakfast tomorrow, cut up veggies for salads for dinner this week, and (not pictured) cut up and froze a bunch of fruit for smoothies for breakfast in the coming weeks.

I'm headed to a Mariners game and wanted to get food in me before I left to avoid stadium food prices, so I made a buffalo chicken wrap with homemade ranch (I have a bunch of dill I need to use).
