It seems like sometimes high end restorations try to go for the "better than the day it left the factory" look, which involves covering the whole car in filler and then sanding it back to what they consider to be the perfect shape.
Either that, or the original metalwork was so dented / rusty that it would never look right.

Sure most restored vehicles get a skim coat before paint but it still looks like a lot to me
well at a value of almost $180K her insurance is going to go up for sure
