Juan thing I hate more than brioche is those sleazebags from NEW YOKE folding their pizza like a sandwich and biting down on all crust. Disgusting and it completely changes the texture. I'll do a U if on the move but never a full fold.

Those are knife and fork meals. Yes, a proper burrito is the size of a mountain man's forearms and must be eaten like a dignified gentleman in a table. Not picked up from a dirty hole in the wall gas station or worse, a NY pizzeria.

I've tried it and the pizza tastes dry as fuck. You 3 are on the list of folks not to have pizza with.
You've had terrible pizza if it could ever taste dry. Dough should be at least 64% water and cold fermented 3 days minimum. Add in good sauce and cheese zero water to get it dry.

I've lived in Texas 3 times in my life and the pizza there is all garbage, it's like going to Canada for Mexican food. You can't judge your Tayhas pizza as real

I will always give Tayhas credit for amazing Mexican food but yall don't know much about pizza.

Also, it's not the water from NY it's the yeast the shops use, yeast builds in the atmosphere you store dough. Doing that for decades creates amazing food. That's why Naples>NYC.

I just ate a couple slices and folded them in your honor.
