If you hunt deer elk bear or most mammals I’d imagine gutting and butchering is all the same
Going to any butcher knowing what cuts YOU want is helpful steaks roast ribs organ meat sausage burger
Butchering yourself can be an investment or hack/cut any muscle group into whatever works too
To me, no idea about a cow but I was taught with game, to help minimize the”gamey” taste and improve the taste
make sure all the silver skin membrane is removed from the meat along with all the sinu (sp) during butchering before it hits the freezer.
