Nice, how did they let it hang? Hanging weight?
I'm getting word that hanging weight was #620.
Assuming 60%, that's #372 /$1920= $5.95/lb.
This is quite a bit less than a normal cow, being grass fed and finished, but quality is what I'm shooting for.
I imagine they left the bones and kidney fat out of the finish weight.
I think I'm gonna empty out my garage freezer and pack my 2 kitchen fridges in anticipation to seal and freeze the bones, which I'll probably have to sawzall in the parking lot.
Leaving my new Frigidaire for the beef.
This will give me a good idea on how to move forward.
