Citrus and airtight are the key.Despite what CanadianMedic says, this is the proper way to make and store your guacamole, this was made 3 days ago, still bright and fresh, citrus juice and seal it tight with plastic wrap to keep the air out and it won't turn on you, unlike my mother in law.
