IMO he knows that the high level of Agaratines in the common white button mushrooms in the store and Portabello mushrooms have high levels and are partially responsible for cancers and tumor growth. Which is big business and of course you won't want to be getting in the way of big business and profits so he won't go on record often on the topic. People don't usually cook them at high enough temps to be healthy and negate the potentially negative effects.


According to Wikipedia, Agaratines are carcinogenic in high doses.

I eat other types of mushrooms which are supposed to have much lower levels, and I cook them well.
I think he is hinting at the most popular mushrooms in the store are the most dangerous and it isn't a coincidence if you know what I'm saying.

Doubt it's the medical/pharma industry that would be overly defensive about it, there's no shortage of things in modern life to keep the supply of illness humming along. But I wasn't aware that over half of all those mushrooms sold in the US are grown around Kennett Square, PA. That's a pretty tightly clustered industry, then:


Definitely could see them getting defensive and threatening. Mushrooms are serious bidness, apparently.

Having lived in eastern PA for many years, mushroom farming is a huge business. The farms stink worst then any other type farm and are very close to residential areas. It gets really bad when atmospheric pressure is low, it suppresses the smell close to the ground.

I never thought clicking on this thread would result in me dumping out my fridge.
I posted about it here a few times over the years.
Stamets just doesn't endorse those two mushrooms(Which happen to be the most available ones), he says there are much healthier ones to include in your diet.
