What are you talking about? There's WAY more options for pizza than traditional Marg pizzas all over Italy.It depends on what kind of pizza you want, and where you are in the city. It's not like Ottawa is renowned for its pizza, but Italian pizza is wildly overrated, unless you want to eat nothing but Margheritas.

It's better in Naples because of the density of Specialists. And yes all the supporting ingredients and industry are part of this. New York has good density as well obviously with pizza dating back 100+ years in New York and a couple million Italians.NY water isn't the trick, the trick is making dough in the same room for a century and getting natural yeast in the air. It's why Pizza in Naples beats the fuck outta NYC and Connecticut.
Theres a few niche pizza spots in Texas that were actually good, but theyre harder to find than a good Mexican joint in Canada.
I don't think that's wrong at all. Don't get me wrong NY has some damn good Pizza and great good all around. Specialists is 1 thing but ingredients matter. You see transplants shipping NY water to Florida to make pizza and it's not as good as the original, even using the same techniques. I know there are a TON of variables to good foods, I just think the NYC water thing is way over played. NYC is top 3 food city in the world.. But.. This isn't just pizza right? It's stretches across dozens of cuisines.. You might have one of the top 5 restaurants in 2 dozen different cuisines but it's not a specialist food city the way some others are.
