Had sweet tea with my Cuban sandwich and devil crab for lunch... and had some boiled peanuts in Georgia on the road trip down. I don't think anybody but southerners know about boiled peanuts.

It's inexplicable. You just have to taste them, they're delicious. great snack. Google a recipe. I like them plain but a lot of people like them Cajun spiced. Peanuts grow everywhere in the south so we make them every ol way.
You boil them in the shell for hours then pop them out

I can't wrap my head around it... Still sounds horrible. And I love peanuts and Cajun seasoning.

If you like boiled peanuts and dont mind some heat try this. Get raw peanuts then boil till soft then drain and pat/air dry. Now put a little bit of oil in a skillet heat to medium throw in the nuts with some crushed garlic and dust with chilie powder and stir fry.

Well...its tasty but ridiculously unhealthy most of the time. Lots of fatties down south. Fried chicken..lots of fried stuff..shrimp, fish. You name it..the south will fry it.
.but the south has a long growing season...so we have great veggies and citrus too. We are known historically as an agricultural region...and we can cook some food.

Im partial to southern cooking because I have southern fam..However im not so fond of all the frying and mass amounts of butter. Moderation, ya know?
but Im in tampa which isnt technically considered deep south. Tampa has a lot of latin/hispanic/ carribean island influence. Sub tropical so we have mangoes..avocado trees..and bananas, yuca..guavas..coconuts...and lots of seafood. ive noticed we have some plants & trees in common so I imagine we have similar climates. .we do have an international airport...and a major seaport..which I think has lead to some fantastic restaurant choices beyond southern and spanish places

Not sure if you can get a hold of grits...but ill get ya a recipe for garlic shrimp cheese grits thats quintessentially southern...but not fried. Its a rich dish...so you'll have to jog afterward. :)

  • 500–750 ml(2–3 cups) water
  • 2 cupsgrits (or instant polenta if you can’t find the real thing)
  • 2 tbspbutter
  • salt and pepper
  • dashof buttermilk
  • 3 tbspgrated extra-tasty cheese
  • dashof sweet paprika (optional)

Thats close. Just sent off an email for a tried and true recipe. Ill forward to you when I get it.
Needs garlic..im a fan, so I use lots...ive never used buttermilk..just plain cream. But the point is the richness so buttermilk should work.
Cheddar is traditional...but I can drop $30 bucks easy in a cheese shop so I'm all about experimenting. Ive made it with asiago, gruyere, manchengo, and parmigiano reggiano.

If you like heat..hit it with some cayenne...its generally garnished with diced tomatoes..and parsley & scallions.
Sautee shrimp separately...throw on at the end
