I think it's an admirable idea.
It would be better to rephrase this as an MMA fantasy picks. Loser promises to make a donation to the well fund.
So make the picks public, and loser can post a screenshot of their donation for proof.
As a site, individual, or PayPal account (against their TOS you might get cash seized) holder we cannot participate in any betting mediation or money handling (that's called a bookie!).
