Lunch: Salmon salad

Dinner: Wagyu smash burger
View attachment 102134

There was a sale on ground Aussie Wagyu, so I decided to try out a couple of burgers this week. This is the first one. It is two 2 oz patties, two slices of American cheese, white onion, spinach, mayo on the bottom, and ketchup on the top. The crust on the patties turned out perfect. For the size of the bun, I could have used more meat if I didn't already have plans for the rest of the package. I'm going to make an 8 oz burger for dinner tomorrow. I'll use the remaining 4 oz with some scrambled eggs, onion, & peppers for breakfast on Sunday.
That fish looks like it is perfectly cooked. Nice.

Breakfast didn't make for a nice picture. Yogurt w/ fruit & nuts. Saturday also = Cheat Meal Day which will be a big ole plate of pasta while watching the UFC and Yankees game.

I noticed you didn't like my pizza.
That's OK.
I didn't either.

Prepped for lunch for the week.

Dinner was a salmon salad. I also prepped oatmeal for the morning, and veggies for salads for dinner this week. I decided to take an afternoon trip to the grocery store that is running a pretty good sale on American Wagyu beef. I picked up a NY strip for lunch on Tuesday, a top round, and a chuck roast I plan to use next week.

I dry brined a tritip overnight in holy cow, then pulled it out of the refrigerator for about 3.5 hours to come closer to temp.

I cooked indirect until it hit 110, then agitated the coals and seared it off a few minutes per side.

After a 20 minute rest this is what I get consistently. Really easy way to grill tritip when you get a decent size cut (this was 4ish lbs prior to trimming the fat cap.

I wish I had a charcoal grill.

Do you live in an apartment or condo building where they aren't allowed? The are relatively inexpensive for a good one and they last generations.
(mine was black so it was $220, but I'm not seeing that on the site right now. At the time I purchased Lowes was $20 cheaper than Home Depot, plus they aren't woke.)

You can get a bare bones kettle for $140.

I do. There are propane grills, and I have cast iron pans and a broiler. I know they aren't expensive.

No deck or no grills there?

I'm in the market for a new one right now
Will end up with Big Green Egg or standard Weber, I was gonna step up from standard webber but fuck it, that might just be what I need.

There is a rooftop deck which is where the propane grills are. Otherwise, no deck.

My kettle is hands down better flavor than my pellet grill/smoker and new propane grill (obviously on propane). My issue with it is limitations on size and how much food I can cook at once. When cooking indirectly it really limits your space. At some point I'll be doing a battling banjos with all 3 going for different reasons. That should be some shit.

Yep

I'm pretty good with the kettle, even without a lid if needed...very solid platform

I feel like if I try an egg or Komodo Joe I might miss the simplicity of basic kettle

I couldn't tell you, but with experience anyone can excel on any given platform. It just boils down to what are you gaining by moving into any given platform. Everything has its pros and cons. I didn't fuck around with my new propane grill tonight with the tritip because I just know what works and tastes great. If you keep the kettle and move to the komodo or green egg, at least you still have the kettle in a pinch.

I thought about going out for a breakfast sandwich this morning.
Then I realized my bear mace had expired.

So...
