minute steak?
Can only describe it is finely sliced not thick...not carpaccio but not far off. Called minute because it pretty much takes a minute to flash fry and it's done. So long as you cut it against the grain before eating, it's tender as hell. I use it in stir fries a lot. The marinade up there I've been doing for about 15 years now, I called it Louiyaki because it is a bit Teriyaki like...just better...and I made it up.

U cook the steak whole right? I am imagining like 1/2 inch or less thick steak that you cook whole then thin slice.

am I close?

I buy it pre sliced in a pack, then marinate it normally for a few hours. I do it with all cuts of steak apart from the obvious ones you wouldn't touch and just leave as they are. It's a good marinating steak, it's a quick marinade and quick to cook. I like it with Chinese mustard greens and just plain white rice.

Anyone ever made kimchi? I love it, and have a real hankering to make it, then do Kimchi fried rice with it. I don't mean burying it in the ground for months, just a quick one. Also like it as banchan.
I like this recipe.
I have 2 Korean grocery stores nearby so I'll be able to find the gochugaru there. Best kimchi I had was in Korea and I won't ever get to that level but something to aspire to.

Ribs are coming along nicely. Not going overboard with mac and cheese, cornbread etc. Couldn't find collard or mustard greens but found some pretty sturdy looking chard which should behave in the same way. Going to do a loaded jacket potato and husband makes a ridiculously good spicy BBQ sauce so we're good for a couple of days.

tang @Vagabond
Have you or Mrs Vagabond been to H Mart since this all kicked off? I hope they aren't suffering. Going to venture over at some point this week, I miss their vegetable selection and I can't find green papaya anywhere else. I'm hating Safeway at the moment.

We are about to bang out 2-3 dozen sourdough bagels today. It'll rest while we go finish our suppressor paperwork.

Scrambled Eggs with cheddar, crab corn soup, fried spam.

Y'all have got me thinking here, matey. I used to make crab corn soup loads.Haven't thought about it in ages. I have the world's supply of eggs and corn, spring onions. I haven't ever used fresh crab...just out of a can. Do you go posh or canned crab? I generally use chicken stock and some ginger garlic.

Fuck me. My Mexican ex used to always cook lobster (as she called it) think crab sticks with courgette and rice. She was a nutritionist too.

I've just realized that not once did I try her cooking. Fuck that.

I'm not saying it isn't. She used to eat the fucker every day. Rice and "lobster"

Now I think about it I don't recall her eating a real lobster. Maybe she thought it was the real deal?
