For all of you food people. I am Ukrainian and my mom sends me homemade stuff all of the time. I am learning from her but I still ask for her to send me the real thing.

This is called nalysnika. It’s basically a rolled up crepe filled with cheese and dill. You bake them with cream. It’s a staple in our family. You eat them with a mixture of beets and horseradish.

Both are frozen, both are incredible.






It’s kind of like Ukrainian sushi but not really.

One day I hope to be able to duplicate this on my own. I’ve tried but always fail. Probably because of my moms touch.

I've been to Prague twice, that's about as much as I know culinary wise. Beets and horseradish are meant to be together.

Making some sourdough pancakes (our new favorite), sausage, bacon, and scrambled eggs. The boy gets to try eggs for the first time this morning so that's exciting!

K this is the simplest recipe, even SongExotic2 @Siton YerDong2 couldn't bugger it up.



Pork picnic shoulder.
Ingredients:
- salt
- pork picnic shoulder




Wash and dry roast
Score skin in crosshatch pattern and fill cracks with course grain salt this will give you the crackling bacon

Place tinfoil on cookie sheet place a rack on top with some parchment paper on top of rack.
Cook at 250°f for 8 hours
Take roast out and cover/rest for 15 minutes. Crank up the heat to 500°f place roast back in oven for 15/20 minutes turning every 5 minutes to get that skin all crisped up and bubbly.

Roast went in an hour ago. Will report back with final results.

Tomorrow pulled pork tacos with mango jalapeno salsa

If husband lets me out again I'm contemplating doing a batch of chilli sauces today to keep busy. I owe someone here a bottle.. I bought this to deal with mangoes because they annoy the fuck out of me but I haven’t used it yet. Grilled mango hot sauce is tits.

What's the game situation there? In the autumn in Amsterdam I used to fill my freezer with ostrich, kangaroo, hare etc. It was epic. I can't get my hands on any of that here.

They have good butchers. The ones in knokke were unreal, I dunno about game, because I'm not an old cunt who eats weirdo shit, but they seemed pretty fantastic.

In Oostende they have butchers and fish stores. One of the butchers has roast beef, that's about all I know.
