Don't bring too much stuff you'll probably pack way more than you use, food etc..
I have way too much stuff. I'm taking notes as to what I don't need because there are places in the Keys where I have to carry everything in. No car. Boat drops you off!

That looks awesome, I used to love sleeping under the stars, no bag, no tent
I've been lucky enough to do that twice here but most of the time it's just too fucking damp man, there is so much water it's in everything even a gore tex bivvy is only just comfortable if it's wet.

Man if your gortex bivvy isn't amazing you're doing it wrong. Id sleep in just a bivvy and sleeping bag in the winter, it gets cold at night in the California/Arizona desert, but its fucking beautiful waking up in the middle of the night and having no clouds and just all the stars you'd ever wish to see.

Double socks and jocks like the boys said.
Couple extra shirts
Tough work pants
Shorts
Warm jacket; if you get fucked up in some way warmth will be key.
Food plan every meal so everything is accounted for
Drinking water I'll cook with the wild stuff but fuck drinking boiled water.
Tent/Bedding
Head Torch
Fire lighting kit box
Hatchet
Pot, Pan, Knife, fork, cup, plate,
Bog roll obviously
There's more that I'd only remember if i was packing my bag...
All of that should fit in or on one of these.

It is, and I have slept in it at -2 C but I'd rather the hammock. That night though was crystal clear and we were fairly high up it was spectacular.

January February can be nippy alright but if it's that cold it's really dry so it actually is a lot more comfortable than the average 9C ish at that time of year, there is so much water in the air usually I can't stress enough how much it sucks, it sucks man.

Edit- I was getting paid.

Your kayak videos are badass!
My friend forgot his little clip that attaches the camera to the chest harness, so I have no GoPro for that last competition I'll post up all of the footage as it comes out from the organisers and other people. The first heat I ran went awesome it should make for a good watch, the second was a lot less awesome and will be a great watch.. :D

Edit- The go pro in the other thread isn't me, but I competed in that same night run and the longer river video is my playground local run.

I'm back home and had a great time. I'll share a few pictures.

Here is the view from my tent.

Took a 4 mile hike through the woods...

Which turned into sand dunes...

Which ended at a pristine, undisturbed beach. Old trees lay untouched where they died.

Thanks for all of the advice guys.

Can you recommend any specific, large volume pack?

I have a 70 litre columbia rucksack that I can't find for sale.. But something like this, Northface are decent Columbia either.. It's worth spending a few quid because the higher end bags really do distribute the weight better..

Hennessy hammocks are the best available here in my opinion, probably like 50 bucks there, best money you'll spend outdoorsing.
Thanks for the cot recommendation. I used it for two nights on my last trip. It was so much more comfortable than the air mattress. By the second night, I was looking forward to laying down on it. I went with this one.

It packs down to 9lbs of nothing, so I carry it in/on my pack.

I'll be working a lot for the next few weeks so I'll take another trip in about a month. I've kayaked like you, in the inter coastal a couple of times and loved it.

Here are a couple of pics from my trip with my son last weekend to Manatee Springs.
