I can see where getting the right amount of seasoning could be tough. I actually used less of each than what he showed on his plate of spices in that video.

I think that's what did me. He had a plateful of spices mounded up.
I used a similar mass.
After 2 hours of cooking it was so tart I winced as I tasted it.
After 5 hours it was just about edible. But still not nice and I wouldn't serve it to a guest.
But it's a learning process and next time I will be more organised and use my smoker too.
It was a good recipe and I appreciate the vid. I can see where I went wrong so it's all good.
