makes 2 pies

4 eggs
14 oz can Evaporated Milk
2 c cooked cannellini beans
1/2 c butter (softened)
2 tbls all-purpose flour (King Arthur is the best)
1 tsp Saigon cinnammon (roasted is best, not necessary)
1/2 tsp nutmeg (bonus points if you grate your own, but make it FINE)
1/2 tsp cardamom
2 c brown sugar (scant, approximately 1.85 cups)
2 tbsp vanilla

preheat oven to 425
mix flour and spices in a bowl
cook beans until very soft, drain
put beans in food processor on high for a few minutes.
add evaporated milk, eggs, and vanilla one at time, blending thoroughly after each
pour filling in pie shells, bake 15-20m (i put aluminum foil around the crust to keep it from burning)
turn oven to 350, bake 35-45m

i use grandma's pie crust recipe. Crust is key for a cannelini pie...needs to be light and flaky, or the whole pie can feel 'dense'.
That reads like a recipe straight from the dear holy Allah himself.

I'm definitely going to try it your way the next time I make a pie.
