I watched a few clips from season 1 on youtube. What's striking is that the show was already wrecking itself before the later seasons with the incest storyline. Jaime buggering Cersei was the main story and it kicked off the wars that were the entire point of the first few seasons.
But at some point everyone just accepts it and eventually they just start openly fucking, making the entire story meaningless. It means 3/5 main story arcs were thrown away - the 5 being: Incest war, Night King, Jon Snow's parentage and its implications, Danerys Quest for Throne and Bran the Broken - with the two latter final ones being boring and nonsensical. It kills any ability to re-watch the show.
I have heard a few detailed critiques of where the show went wrong but they honestly don't even scratch the surface.

They started to mess with the incest story line well before the show properly started going off the rails in season 5. It might be a fat fuck Martin problem, not a show-specific problem.
They changed it from being seen as a rumor that was defended as a conspiracy peddled by usurpers to something everyone knew and was just used as a punchline. Jaime even just talks about it with Catelyn and Brienne. Eventually they just start letting people walk in on them in bed.
It makes everything that preceded it seem silly.
Documentary on HBO at the moment, making of the last season, not bad so far.
Nobody cares to watch documentary after season 8.
