I made some catfish stew last night. I have eaten it my entire life and love it but never made it. It turned out good

Using the cast iron Dutch oven I put 12oz of salted pork and rendered the fat, removed the pork, and set aside
I spent an hour cooking down a few onions, adding garlic the last 10 minutes
I cubed up a bunch of potatoes prior and had to soak them in water, I drained those and added them to the pot covered with chicken stock, put the lid on, and in the oven at 350 for a while
the catfish filets were very lightly dusted with corn flour (just what I had on hand, I think anything would work) and a heavy coat of S&P
once the potatoes were soft I added a can of cream of mushroom, the crumbled pork fat, and then the filets, then back in the oven
make some rice and serve the stew on top

you can substitute any whitefish for catfish. You could also use chicken or sausage. I will serve the leftovers over grits today for lunch since the whole family is home for a snow day.

Dude that's just South Carolina grandma style

If you're out camping/fishing the old guys cut the head off the catfish and lay across the bottom of the pot and put everything on top. Flavor and prevents stew from sticking. I've had it like that a few times.
