They show writers are not improvising it, they've met with GRRM to learn the arc of each character and how the story ultimately ends.

@KWingJitsu makes a good point. The teleportation devices that allow Dany to go from Meereen to Dragonstone in half an hour (and therefore never get the chance to speak with Varys privately) might also have an effect on dragon size.
