I need to get a brisket done but need to be gone all day.
Anyone ever used an oven?

Of course I'm concerned about deposit.

My grandfather smoked millions of them in gas ovens back in the 40's. They were all kosher.

We use our gas oven in the restaurant to make our pulled pork, it's not smoked, just long and slow, Our smoky bbq sauce takes care of the smoke flavor.

In this thread I am a Texan and there is no other brisket made besides Texas brisket. The rest are all store brand dollar tree bodega briskets.

My dad was a big nerd. When home microwave ovens first became mass available to the public, he bought one. It was fucking huge. This was in probably the early 70s. He made our Thanksgiving turkey in it. It was horrible. Tasted like a basketball. We never let him forget that.

We got ours in 80, I still remember the cookbook that came with it, could cook anything in it, roasts, chickens, turkey, etc
 
Start it off outside with the smoke, bring it in after an hour and do the whole day thing in the oven. You'll still get the flavor.
