I inherited the green egg from my brother and honestly it's a pain in the ass. You have to watch it constantly, the temp can go up or down unexpectedly, for reasons I can't explain. Unless I'm going to be outside doing yard work for the day I don't use it.

I didn’t have coriander which I prefer and I didn’t have lime so I pickled the carrot. Cabbage and onion in rice win and sugar

That looks amazing. Are you using Honey Hog (Meat Church) or Killer Bee (Kosmo Q) rub? It looks like you are.Bout to cook some ribs.
Just some generic seasoning. A general purpose salt, pepper, garlic seasoning and sugar rub with cayenne and cumin. Used yellow mustard for a binder and I'll smoke them with hickory. Beautiful, I too use honey. I do the 3-2-1 method and before the wrap i brush on some honey and sprinkle some more rub on, comes out amazing.
