I7 is fine. AMD has some sweet new processors though.
Get a big ass SSD if you can swing it. Although it's a bit unnecessary get a TB.
Get all of the RAMs. All of them.

I'm at least a year off of doing 4k vlogs and shit btw. This is a comp I plan on using abut 2 years and then giving to my nephew

Most of the new AMD line-ups are really good....check out AMD Ryzen 1700 or 1800, normally come with wraith cooler. so save money that way.

I recommend using pcpartpicker.com to help you build it.

Though you can always pick up a barebones build...either just a motherboard build or one with case / psu etc.

If i were building a new comp, i'd go with Ryzen CPU and a pick a relatively good GPU like RX 480 / 580

I video edit on a similar machine.
You can never have enough RAM or processor.
Some SSD are better than others. The Samsung EVO series is the go-to.

That machine will be DRAMATICALLY better than your current machine.

I honestly think I'll be able to do stuff in half the time, or more likely, do twice the work

My current 300 dollar laptop is frozen more often than not (let alone the rendering time)

Appreciate the feedback!
