I do lots of fermentation kombucha, milk kefir. I had a ton of serrano peppers and need to make fermented hot sauce!

I actually have a fancy fermentation jar I've never even used (Smiff style!). Literally still in the box.
I'll give this a try at some point.
She roasting any of the ingredients first or just raw?
Raw
usually from the garden if possible
we have some round glass/puck/weight thing that holds the solid stuff under water level
we went 5-7 days last batch, just watch and smell and then blend and refrigerate

Remove anything that floats to the top
Can link a recipe if needed she says

I do a lot of roasting but that goes into fresh salsa/ canned salsa/ or roasted peppers that we just dry...will freeze dry some this year for the first time.

Kombucha

has had a sourdough starter going since 2020 that has been given to dozens of people around the USA

I just laugh and call them more experiments

Oh year I forgot about I also have a sourdough started and make sourdough items from bread to rolls and my favorite focaccia!

The possibilities are endless.
She just started making these super thin pizzas in a cast iron high wall skillet, using just the starter with nothing added using only a couple ingredients(capers, olive oil cheese, canned red pepper chunks). Looks like an ultra thin crust deep dish with barely any ingredients at all, yet somehow filling because the starter is hearty even though thin.
