For the Canada's sous vide is a great option. Failing that cut up carrots, onions, mushrooms, celery, potatoes, put them with the breasts in a slow cooker. Add some beef broth until the level is high enough that the meat is covered. Turn the slow cooker on low for about 6 hours. Serve the same way you would roast beef.The Canada's? Whole on the smoker.
The snows I use the breasts for jerky and the legs I marinade for a few days, wrap in bacon, and rub down with some nice honey based bbq rub and toss them on the smoker.
