I thought about going out for a breakfast sandwich this morning.
Then I realized my bear mace had expired.

I told the kids to get busy.



After that thread, I checked my bear spray. The full size canister I keep in my truck for actual bears and/or militant Seattle protester groups doesn't expire until 01/2025. My pocket canister that I used doesn't say anything on it, but I know I got that one after the one in my truck.

Lunch: Ground bison cheeseburger omelette with diced onion.

Dinner: Nashville Hot Chicken sandwich w/ bacon & white cheddar. Mayo on the bottom bun, the top bun was brushed with the same hot sauce the chicken was finished with. The bacon was fried alongside the chicken.

Tomorrow, this goes into the dutch oven for three hours and becomes Birria. The flavor of this marinade is bomb. I cut up some beef chuck into two inch cubes. It'll be shredded after it has been cooked.

Breakfast: Scrambled eggs, ground bison, & hot sauce.

After simmering the above marinaded beef chuck for three hours:

Dinner will be a salmon salad.

I also made oatmeal for breakfast tomorrow. My cooking is done. My laundry is done, and the dishwasher is running. It is 9:15am. Almost time for a Costco run and a trip to the hardware store while my Roomba cleans my floors, then lunch and I'll bottle up the rest of that marinade sauce.

I picked up a cast iron press at Goodwill that didn't come with the screws to attach the handle. 99 cents at the hardware store fixed that. Not bad for $6 total. I decided to use it to render some duck fat out of this thigh & leg.

Made 3 LBs of marinated Lamb
2 different flavors...Terriyaki garlic and rosemary garlic lime

Turned out great, kept it med rare...love me some lamb for the hint of gamey

Still dialing in the new propane grill. Not getting temps where I want them sometimes, like 2 chickens indirect (super easy if it was just a single chicken), but it's a learning process. End product was money, but getting there was a challenge. I'll dial it in in a few more cooks.

I avoid buying 2nd hand kitchen equipment. I know a guy that was high with a bunch of friends and he took a shit in a waffle iron and cooked it. The whole house stunk like burnt shit and two guys puked.

They then thought it would be funny to donate it to a Salvation Army and a week later one of the guys noticed it was gone. They don’t know if someone bought it or if they threw it out.

It was cleaned to an extent before they took it in but it’s still fucking gross. I didn’t believe it was true at first but I’ve known one of the guys involved since I was 4 years old and he drove the guy to the store and watched him go in with it and come out without it. The guy is dumb but very trustworthy. He wasn’t the shitter but he’s one of the pukers.

I wash things I buy. With cast iron, I strip and reseason.
