For winter these are 1000% nicer than my regular thermopro probes. I don't have to go out in the cold to check temps or leave a window cracked so I can hear the alarm.

It's really good but having experienced many marinated meats beef is better dry brined in only salt if at all and definitely not for a week. The whole texture changes for the worse, imo. The beefier the flavor the better and brisket is the king of beef.Thats probably true.
I'm surprised it originated in Romania.
