Went to some place called Middletown in New York to visit a good fren whose wife had her first art exhibit.

Stayed 2 days and partied with the marine corps. Fun bunch of guys :) The day before I bumped into this Mexican dude selling giant tamales out of the trunk of his car so I brought half a dozen. They were really good, he made them with "costillitas" which means ribs.

They tasted a lot like Peruvian tamales which my gf loves , the marines loved them lots of HOorah Hoorah

I wanna make it with Pastrami next tiiime and the good cheese , those are just Kraft swiss cheese slices lol the cheap juans but it came out reeeeally good

It's really good but having experienced many marinated meats beef is better dry brined in only salt if at all and definitely not for a week. The whole texture changes for the worse, imo. The beefier the flavor the better and brisket is the king of beef.

That said, I haven't tried that NY or whatever God forsaken village pastrami is from. It may be life changing. I have tried some of the best brisket, though. And that shit is like voodoo, baby.
