Ive had incredible strami sandwiches across the landIt's really good but having experienced many marinated meats beef is better dry brined in only salt if at all and definitely not for a week. The whole texture changes for the worse, imo. The beefier the flavor the better and brisket is the king of beef.
That said, I haven't tried that NY or whatever God forsaken village pastrami is from. It may be life changing. I have tried some of the best brisket, though. And that shit is like voodoo, baby.
