It's really good but having experienced many marinated meats beef is better dry brined in only salt if at all and definitely not for a week. The whole texture changes for the worse, imo. The beefier the flavor the better and brisket is the king of beef.

That said, I haven't tried that NY or whatever God forsaken village pastrami is from. It may be life changing. I have tried some of the best brisket, though. And that shit is like voodoo, baby.

Probably just me. The only meat I truly love marinated is chicken. I don't even like fajita(skirt) marinated for too long. 30 mins tops or its starts tasting like ham or sausage. I'd rather just baste it with a lime sauce instead if I want that flavor. It's like when someone ruins the burgers by premixing the seasoning into the whole batch of burger meat. I hate meat loaf, I definitely don't want a meat loaf sandwich.

Mixing up the ground beef and seasoning is how they make sausage. That's why they're chewy and they are, don't pretend. Form your patties, take em to their destination(griddle, grill, pan) then season before you drop. That's a beefy burger.
