You have a bread machine, no?
Indeed, hence you having me beat.

I make my own pasta but I use that bread machine loads because apart from the 100% wholewheat bread, the shop bought stuff in this country is pretty useless. I have the world's supply of flour and yeast so I'm not going to starve for a while.

Decided to check the sourdough starter a bit early. It's really starting to take off. It's doubled in size from last night.

What's a sourdough starter? It looks like ranch dressing
It's water and flour, you use it to activate the wild yeast on the flour and then use pieces of the starter to make bread. You'd use the sourdough starter as your yeast.

I used to make bread all the time. I bought a sourdough starter that was supposedly over 100 years old, and kept it for at least 4-5 years. It was a living creature that I had to feed and take care of every day. If I was home daily, I would do it again, but if I left it for my wife to take care of, it would die.

If you have Netfix, check out the episode "Pasta a'la Raimi" of the third season of The Chef Show. It's Jon Favreau with some famous pals cooking.
He is BANANAS about soda bread. I really didn't know how complicated it was, I haven't made soda before.

Well worth the watch if you take soda as seriously as he does.

Bread flour, all purpose flour, water, some olive oil. You use the all purpose flour and water to make the starter then later once its ready use the bread flour to make bread.
