Tampico is good for nothing other than marinade, but it does its job 10 fold if you use it like I do. Great pops of citrus in the meat. With flap meat, just make sure the grill is hot as shit, then keep flipping each time a bit of meat juice rises to the top so you don't dry it out. You have to man the grill for flap meat cooking. Flip, flip, flip, flip, flip....
