I picked up another cutting board off of Etsy. I gave it it's second treatment of a board conditioner last night and I should be ready to slice, dice, put in rice by tonight.

Clean it well because the oak is very porous and food particles can get trapped in there and make you sick.

Chicken thighs marinated in vinegarette overnight, then cooked indirect until they temped at 180ish and finished direct for the char.

No, those louisiana spicy sausages were cooked to perfection. I go indirect until they swell up, then put them directly over the coals so the skin splits and they get those nice crispy brown bits.I think you burnt your coal..
